Sausage White Bean Kale Soup

Ingredients:

  • 3 T avocado oil

  • 1 pack of 4 Italian chicken sausage, sliced diagonally

  • 1 onion, diced

  • 6 medium carrots, washed and chopped

  • 16 oz chicken bone broth

  • 2 cans white beans, drained and rinsed

  • 1 bunch Dino kale, chopped

  • 1 T minced garlic

  • 1 tsp sea salt

  • 1/2-1 tsp red chili flakes

  • Ground pepper, to taste

  • 1 tsp Herbes de Provence, optional


Directions:

  1. Heat 2 T avocado oil in large pot over medium heat. Brown sausage 4 min per side; remove. Add 1 T oil and cook onion 2-3 min until translucent. Add garlic and carrots, cover and cook 4-5 min.

  2. Blend 1 can white beans with 2 cups bone broth until smooth. Add to pot with remaining broth, beans, sausage, and seasonings.

  3. Simmer covered 15 min. Add kale, cook 10 more min.

  4. Serve with extra chili flakes and pepper.
