Gingerbread Chia Pudding

This recipe is a subtly sweet breakfast pudding rich in spices that taste like a gingerbread cookie. Make this on a cold winter morning for a cozy, warming breakfast that’s full of fiber, protein, and Omega 3s from chia and hemp seed. Serves 1.

Ingredients:

  • 1 ½ cups unsweetened plant based milk

  • 3 T chia seed

  • 1 T hemp seed

  • 1 t vanilla extract

  • 1 ½ t gingerbread spice blend (cinnamon, ginger, cloves, allspice, nutmeg)

  • Pinch of salt

  • ½ t maple syrup

  • 1 scoop vanilla protein powder (see our favorites on GreenMind’s Amazon page)

    Optional toppings:

  • Pecans

  • Pomegranate

  • Greek or coconut yogurt


Directions:

  1. Add all ingredients except protein powder and toppings to a small pot. Cook 7-8 min over medium heat, stirring occasionally, until mixture reaches a thick, porridge like consistency.

  2. Remove from heat and stir in one scoop of vanilla protein powder.

  3. Top with yogurt, pomegranate and toasted pecans. Enjoy!

Recipe note:

If you don’t have a gingerbread spice blend, you can mix your own, or pumpkin spice blend gives a similar flavor.
