High-Protein Egg Bites

This recipe should yield about 6 egg bites, depending on the size of your muffin cups or molds. To hit the target of 30 grams of protein per serving, you can adjust the serving size. Based on the ingredients, two to three egg bites should provide approximately 30 grams of protein, depending on the specific meat used and the size of the eggs.

Makes 6 servings

Ingredients:

  • 10 large organic eggs (about 6 grams of protein each) (60 grams)

  • 1 cup organic Good Culture cottage cheese (about 28-38 grams of protein)

  • 1 cup cooked and diced meat (I used bacon)

  • 1/2 cup diced bell peppers

  • 1/4 cup diced spinach or kale

  • 1/4 cup finely chopped onions

  • 1/4 teaspoon garlic powder

  • Salt and pepper to taste


Directions:

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or silicone egg bite molds with a bit of oil to prevent sticking.

  2. Whisk the eggs and cottage cheese together in a large bowl until well combined. The mixture should be relatively smooth with small bits of cottage cheese throughout.

  3. Cook the veggies: Heat a small skillet over medium heat. Add a teaspoon of olive oil, then sauté the onions, bell peppers, and spinach (or kale) until they're just softened. Let them cool for a few minutes before adding them to the egg mixture.

  4. Add the cooked meat to the egg and cottage cheese mixture, followed by the cooked veggies. Stir in the garlic powder, salt, and pepper. Mix everything until well combined.

  5. Divide the mixture evenly among the prepared muffin cups or silicone molds. Fill each one about 3/4 of the way to allow room for the egg bites to rise.

  6. Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top. A toothpick inserted in the center should come out clean.

  7. Let cool for a few minutes in the pan/molds, then run a knife around the edges and remove the egg bites. Serve warm.
