Asparagus Spring Soup

Serves: 1

Ingredients:

  • 1 bunch organic asparagus (woody ends snapped off)

  • 1 bulb organic fennel (fronds removed, cut into wedges)

  • 1 organic garlic, (cloves, minced)

  • 2 tablespoons organic shallot

  • 2 cups organic chicken bone broth (more or less depending on desired consistency; prefer Kettle & Fire or another frozen brand)

  • 1 teaspoon sea salt & black pepper (to taste)

  • 1/2 organic avocado

  • 1 tablespoon lemon juice

  • 1/8 teaspoon cayenne pepper (to taste)

  • 2 teaspoons hemp seeds


Directions:

  1. Steam fennel bulb and asparagus until fork ready.

  2. Add all ingredients to a high speed blender. Blend until smooth.

  3. Sprinkle with hemp seeds. Enjoy!
