Immune-Boosting Bone Broth
Packed with collagen, amino acids, and gelatin, this nourishing bone broth can help soothe and repair your digestive system. This mineral-packed elixir serves as a versatile base for soups, stews, or simply sipped on its own for a comforting and healthy boost.
Makes: ~ 3 quarts
Ingredients:
Bones of 1 chicken
Mixed veggie scraps of choice (carrots, celery, parsnip, onion, etc.)
Filtered water
2 Tbsp organic apple cider vinegar
1 piece of Kombu seaweed (optional)
1 generous pinch each sea salt and black pepper
Directions:
Add bones, veggies, kombu, herbs/seasonings, apple cider vinegar, and plenty of water to your Instant Pot. Your water level should be just below the “max fill” line.
Place lid on Instant Pot and lock into place. Flip vent valve to ‘Sealing’.
Select High-Pressure setting and adjust the cooking time to 120 minutes.
When cooking is done, allow pressure to release naturally (10-20 minutes).
If you have time, you can go on to cook the broth an additional 24 hours on slow cooker settings. You may need to add additional filtered water at this step.
Allow broth to cool before straining the broth through a mesh lined strainer into jars for storage.
Add salt to taste.
Note: Bone broth typically gelatinizes when refrigerated because of the collagen content. Don't worry, that's normal. When it is reheated, it liquifies once again, just like store-bought chicken broth.
