Air Fryer Cajun Salmon & Zucchini

A quick and delicious 20-min recipe, packed with healthy omega-3 fatty acids and 33g of protein per serving, making it the perfect go-to guilt-free lunch or dinner after a busy day!

Serves: 2

Ingredients:

  • 1/2 yellow onion (cut into large chunks)

  • 1 zucchini (large, sliced in half moons)

  • 1 tablespoon avocado oil (divided)

  • Sea salt & black pepper (to taste)

  • 10 oz salmon filet (skinless, cut into large cubes)

  • Hearty shake of Paleo Powder Pink (or your favorite cajun seasoning)


Directions:

  1. Preheat the air fryer to 400°.

  2. In a bowl, toss together the onion, zucchini, half the oil, salt, and pepper. Transfer into the air fryer basket. Arrange in an even layer and bake for six to seven minutes, shaking halfway through. Remove and set aside.

  3. Place the salmon in the same bowl and toss with the remaining oil and cajun seasoning. Transfer to the air fryer and bake for five to six minutes, or until cooked through.

  4. Divide the salmon and veggies onto plates and enjoy!


Serving Size: One serving is about 1 1/2 cups.
